LITTLE CUISINE OF LAKE COMO

After 40 years of running Montecodeno Restaurant, starting this week and every 15 days, Chef Ferruccio Castelli will enrich this column with his Lake Como’ time-honored recipes… and more.
His career began when he was 14 y.o., when Castelli was a Sous-Chef at Biffi Restaurant in Milan.
He worked then in others important restaurants in Milan, as well as at Villa Serbelloni in Bellagio, or in Saint Moritz, in Madesimo and so in others famous touristical locations.
In 1974 Castelli bought Montecodeno Restaurant, which became also a Hotel, and he started cooking plates based more on lake fishes.
He was the President of the Associazione Cuochi della provincia di Lecco and in 2009 he was nominated Cavaliere della Repubblica thanks to his research on Lake Como traditional tastes and products, as “misultin” and the “real” rice with Perch fish.
After serving lot of Italian Celebrities too, he’s now giving cooking lessons all around the world, from South America to the States, as well as in Southeast Asia.
The first of his recipes is a Lake Como’ must: Rice and Perch fillets.
